Process: Carbonic Macerations Natural

Overview: The Carbonic Maceration process is where the cherries are picked perfectly ripe, hand sorted and floated to remove any unripe or overripe cherries. For fermentation they are placed in stainless steel tanks while still in cherry, the carbon dioxide-rich environment helps to intensify and further develop the flavours of the coffee without risk of over-oxidization or alcoholic fermentation. When fermentation is finished the coffee is dried on African beds for 12-18 days before being stored and milled.


The Jasper category of CM Selections includes those coffees which have a flavour profile reminiscent of red, orange and yellow fruits. These coffees have undergone a range of carbonic maceration processes, in order to provide maximum flavour and clarity with medium level intensity.

Overview: The Carbonic Maceration process is where the cherries are picked perfectly ripe, hand sorted and floated to remove any unripe or overripe cherries. For fermentation they are placed in stainless steel tanks while still in cherry, here the oxygen is removed and the carbon dioxide-rich environment helps to intensify and further develop the flavours of the coffee without risk of over-oxidization or alcoholic fermentation. When fermentation is finished the coffee is dried on African beds for 30 or more days before being stored and milled.

The Indigo range of CM Selections includes coffees that have a profile of intense flavour, powerful fruit qualities and unique elements. This includes coffees that have undergone extensive and experimental fermentation, creating bold and strong flavour profiles.

Process: Carbonic Macerations Washed Process

Overview: The ‘Diamond 0419’ lot is a replica of the ‘Diamond 1318’, which was used by Agnieszka Rojewska to win the 2018 World Barista Championship. This heirloom varietal has been processed using ‘carbonic maceration’ techniques, in which the coffee is fermented in a sealed environment, free from oxygen and flushed with CO2. This, along with controlled temperature and humidity, controls the yeast activity and development of fermentation.


The Diamond category of the CM Selections is the most elegant and delicate of the three CM coffees. This Diamond selection is floral, clean, and has a refined and gentle flavour profile.
